# What You'll Need:

→ Beef

01 - 14 oz flank steak or sirloin, thinly sliced against the grain

→ Marinade

02 - 2 tbsp soy sauce
03 - 1 tbsp cornstarch
04 - 1 tbsp Shaoxing wine or dry sherry
05 - 1 tsp sesame oil

→ Vegetables

06 - 7 oz snow peas, trimmed
07 - 2 medium carrots, peeled and sliced thin on the bias
08 - 2 cloves garlic, minced
09 - 1 tbsp fresh ginger, minced
10 - 2 spring onions, sliced

→ Stir Fry Sauce

11 - 3 tbsp soy sauce
12 - 1 tbsp oyster sauce
13 - 1 tbsp hoisin sauce
14 - 1 tbsp water
15 - 1 tsp brown sugar
16 - 1 tsp cornstarch

→ For Cooking

17 - 2 tbsp vegetable oil

# Method:

01 - Combine beef slices with soy sauce, cornstarch, Shaoxing wine, and sesame oil in a medium bowl. Mix thoroughly to coat and marinate for 10 minutes at room temperature.
02 - Whisk together soy sauce, oyster sauce, hoisin sauce, water, brown sugar, and cornstarch in a small bowl until smooth and fully combined. Set aside.
03 - Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Add marinated beef and stir fry for 1-2 minutes until browned on edges. Remove beef from pan and set aside.
04 - Add remaining 1 tbsp oil to the pan. Stir fry minced garlic and ginger for 30 seconds until fragrant, being careful not to burn.
05 - Add sliced carrots and snow peas to the pan. Stir fry for 2-3 minutes until vegetables are tender-crisp and brightly colored.
06 - Return beef to the pan. Pour in prepared sauce and toss all ingredients together for 1-2 minutes until sauce thickens and coats everything evenly.
07 - Remove from heat immediately. Garnish with sliced spring onions and serve hot with steamed rice or noodles.
