03 - Season each beef ball evenly with salt, black pepper, smoked paprika, and garlic powder.
04 - Place tortilla on griddle. Top with shredded cheddar and Monterey Jack cheese mixture covering the tortilla center.
05 - Place seasoned beef ball on cheese mound. Press firmly with spatula or burger press to spread beef thinly over cheese and tortilla.
06 - Cook for 2-3 minutes until beef develops crispy edges and cheese becomes golden and bubbly.
07 - Flip entire taco assembly. Cook tortilla side for 1-2 minutes until crisp and golden.
08 - Transfer tacos to serving platter. Top each with lettuce, tomatoes, red onion, jalapeño slices, cilantro, and sour cream.
09 - Serve tacos hot while cheese remains melted and tortilla stays crispy.
