01 - Combine chicken strips with 1 tablespoon olive oil, lemon juice, oregano, cumin, paprika, salt, and black pepper in a bowl. Mix thoroughly and let marinate for 10 minutes while preparing vegetables.
02 - Heat the remaining 1 tablespoon olive oil in a large skillet or wok over medium-high heat until shimmering.
03 - Add marinated chicken to the hot pan. Cook for 4–5 minutes, stirring frequently, until chicken is cooked through and lightly browned. Remove from pan and set aside.
04 - Add onion and bell peppers to the same pan. Stir fry for 3 minutes until vegetables begin to soften but still retain crunch.
05 - Add zucchini and minced garlic to the pan. Continue stir frying for 2 minutes until zucchini is tender-crisp.
06 - Return cooked chicken to the pan. Add cherry tomatoes and cook for 2 minutes until tomatoes begin to soften. Add spinach and toss until just wilted, about 1 minute.
07 - Remove from heat immediately. Sprinkle with crumbled feta cheese and fresh parsley. Serve hot with lemon wedges on the side.
