23 - 1/2 cup Kalamata olives, pitted and halved
24 - 1/2 cup feta cheese, crumbled
25 - 2 pieces pita bread, optional for serving
26 - Lemon wedges for garnish

# Method:

01 - In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Add chicken and toss to coat thoroughly. Marinate for at least 20 minutes or up to overnight in the refrigerator.
02 - In a separate bowl, combine Greek yogurt, grated cucumber, fresh dill, lemon juice, minced garlic, olive oil, salt, and black pepper. Mix until well combined and refrigerate until ready to serve.
03 - Heat a grill pan or skillet over medium-high heat. Cook marinated chicken for 5 to 6 minutes per side until golden brown and cooked through. Allow to rest for 5 minutes, then slice thinly.
04 - Divide cooked rice evenly among four bowls. Top each bowl with chopped romaine lettuce, halved cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, and crumbled feta cheese.
05 - Arrange sliced chicken on top of each bowl and spoon tzatziki sauce generously over the components.
06 - Present bowls with pita bread and lemon wedges on the side for individual customization.

# Insider Tips:

01 -
  • These bowls are completely customizable, so even your pickiest eaters can build their perfect Greek-inspired creation without compromise.
  • The tzatziki sauce doubles as an amazing dip for vegetables the next day, making meal prep feel like youve given yourself a gift.
02 -
  • Never skip squeezing the cucumber for tzatziki – I once did in a rush and ended up with a watery mess that ruined the entire bowl.
  • Letting the chicken rest after cooking isnt optional – slice too soon and youll lose all those precious juices that took so long to develop.
03 -
  • When reheating leftover chicken, add a splash of water to the pan and cover it briefly to create steam that revives the moisture without drying out the edges.
  • Make double the tzatziki and freeze half in an ice cube tray – pop out a cube whenever you need a quick sauce for grilled meats or a spread for sandwiches.
