01 - Line a mini muffin tin or a baking sheet with small silicone or paper liners.
02 - In a medium mixing bowl, combine Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and salt. Stir until smooth and well blended.
03 - Gently fold in mini chocolate chips and chopped peanuts, if using, distributing them evenly throughout the mixture.
04 - Spoon the mixture evenly into the prepared liners, filling each to the top (about 1 tablespoon per bite).
05 - Smooth the tops with the back of a spoon for an even finish.
06 - Freeze for at least 2 hours, or until the bites are completely firm and set.
07 - Once frozen, remove the bites from the molds and transfer to an airtight container. Store in the freezer until ready to serve.
