Spiced, naturally sweetened bites with classic carrot cake flavors—no oven required for this healthy portable treat.

# What You'll Need:

→ Base

01 - 1 cup rolled oats (certified gluten-free if needed)
02 - 1 cup finely grated carrots (about 2 medium carrots)
03 - 3/4 cup raw walnuts
04 - 1/2 cup unsweetened shredded coconut
05 - 1/2 cup pitted Medjool dates (about 6-7 dates)

→ Flavor & Binding

06 - 1/4 cup pure maple syrup or honey
07 - 1 tsp vanilla extract
08 - 1/2 tsp ground cinnamon
09 - 1/4 tsp ground ginger
10 - 1/8 tsp ground nutmeg
11 - Pinch of salt

→ Optional Mix-ins

12 - 1/4 cup raisins
13 - 1/4 cup chopped pecans or walnuts

# Method:

01 - Combine oats, walnuts, and shredded coconut in a food processor. Pulse until finely chopped and uniform in texture.
02 - Add pitted Medjool dates to the processor. Pulse again until the mixture becomes crumbly and dates are well distributed.
03 - Pour in grated carrots, maple syrup, vanilla extract, cinnamon, ginger, nutmeg, and salt. Process until the mixture begins to clump together and holds shape when pressed between your fingers.
04 - Transfer the mixture to a mixing bowl. Gently fold in raisins and additional chopped nuts if desired.
05 - Lightly moisten your hands to prevent sticking. Roll tablespoon portions of the mixture into smooth, round balls, approximately 18 total.
06 - For added texture and appearance, roll the finished bites in extra shredded coconut until lightly coated.
07 - Place the bites on a baking sheet or plate. Refrigerate for at least 30 minutes to allow flavors to meld and texture to firm before serving.

# Insider Tips:

01 -
  • They taste exactly like carrot cake but take literally twenty minutes from start to finish
  • Perfect for that 3pm slump when you want something sweet but actually nutritious
02 -
  • Damp hands are non-negotiable or the mixture will stick to everything except itself
  • These taste infinitely better after theyve had time to chill in the fridge
03 -
  • Really pack the mixture tight when rolling or they might fall apart
  • Warm the maple syrup slightly if your mixture seems too dry
