# Insider Tips:

01 -
  • The combination of creamy spinach and briny oysters creates an irresistible contrast that keeps everyone reaching for more
  • This dish looks impressive but comes together in under 30 minutes, making it perfect for impromptu romantic moments
  • The Pernod adds a subtle anise note that elevates the entire experience without being overpowering
02 -
  • Practice shucking oysters before you attempt this for a special occasion, it takes some confidence and the right technique
  • The rock salt on the baking tray is not optional, it keeps the oysters level so all that delicious topping stays put
  • Watch them like a hawk under the broiler, that topping can go from perfect to burned in thirty seconds flat
03 -
  • A really good oyster knife makes all the difference, cheap ones bend and can be dangerous
  • Buy a few extra oysters, some will inevitably be difficult to shuck or not look perfect when opened
